- 400 g bananas ripe
- 120 g sugar any
- 75 g oil
- 225 g flour
- 10 g baking powder
- 4 g ground cinnamon
- salt pinch
- handful nuts or choc chips
Preheat a fan forced oven to 170*C (335*F)
In a bowl, mash bananas until broken down, and add sugar and oil and mix until well combined.
Add plain flour and baking powder and mix with a silicone spatula until the mixture is well combined.
Pour into a small (8x4in) loaf tin lined with baking paper.
Cut a thin slice of cold vegan butter and cut into strips to place in the middle along the length of the batter – this will help the banana bread crack nicely along the middle
Bake for 35-45 mins depending on dimensions of your loaf tin and oven. Note, the last part of the loaf to bake is just below the middle of the crack, so when an inserted skewer comes out clean your banana ‘bread’ is ready!
Serving suggestion – for a delicious treat, top with slices of fresh banana, your favourite nut butter and some vegan honeycomb
