Imagine waking up on Valentine's Day to these. The house smelling of freshly baked Muffins. These beauties are both Vegan and Gluten Free!

Ingredients

  • 1 1/2 cups oat flour
  • 1/3 cup cacao powder
  • 1/8 tsp salt
  • 1 tbsp baking powder
  • 1 banana mashed
  • 1 zucchini grated
  • 1/2 cup maple syrup
  • 1/2 cup almond butter
  • 1/2 cup plant milk
  • 1/2 cup strawberries diced

Instructions

  • In a bowl, mix together all the dry ingredients
  • Once mixed, add in all of the we ingredients
  • once everything is mixed, pour into your muffin tins (this makes 9-12 depending on how much you fill up the tins!) and bake for 20-25 minutes, until a toothpick can be removed cleanly (if you make only 9 muffins then they will need an extra couple of minutes!)
  • let cool before removing from the pan and enjoy! Make sure to store in the fridge!
