These pumpkin and black bean enchiladas make a cozy vegan dinner with plenty of flavor and substance. The black beans bring plant-based protein and pair well with the creamy pumpkin filling. Taco seasoning adds warmth, while enchilada sauce gives the tortillas a rich, savory finish.
Enchiladas make a great weeknight meal because you can prepare them ahead and bake them when dinner rolls around. Simply mix the filling in one bowl, roll the tortillas, and cover them with sauce. Pumpkin brings a lovely fall flavor to the dish without making the recipe complicated. The black beans also add protein and make the filling more substantial.
