Ingredients
For the sauce
2tbsp(32 g) tomato paste
2tbsp(28 ml) soy sauce
1tspred pepper flakes
½tspground cumin
½tspgarlic powder
Salt and freshly ground black pepper
For the rest
2tbsp(28 ml) grapeseed oil or other
Vegetable oil
1carrotdiced
1stalk celerydiced
8oz(225 g) extra-firm tofu, diced
¼cup(32 g) nutritional yeast
Instructions
In a bowl, mix together all the sauce ingredients, including salt and black pepper to taste, plus ¼ cup (60 ml) of water.
Heat the oil in a pan over medium heat.
Add the carrot and celery and cook for 1 minute.
Add the tofu and the sauce and cook, stirring, for 5 to 7 minutes.
Adjust the salt. Turn off the heat, add the nutritional yeast and mix.
