Ingredients
For the dressing
2tbsptahini paste
1lemon juice
1crushed garlic clove
¼tspground cumin
2tbspyoghurt
3tbsppure maple syrup
For the salad
2sweetpotatoesfinely sliced and cut into triangles
1sliced apple
½sliced red onion
1medium-sized sliced beetroot
1sliced spring onion
1bag mixed leaves salad
1tbsppickled cabbage
Instructions
For the dressing, mix all ingredients together, then keep aside.
For the salad, grill the sweetpotatoes in a griddle pan, then keep aside.
Mix all salad ingredients in a large bowl, add half of the dressing, the grilled sweetpotatoes and stir.
Serve the salad with the remaining dressing on the side.
