Not that you needed a reason to bake a cake, but in case you want an excuse, October 2-8 is National Cake Week.
So go preheat that oven – because this week calls for celebration.
1. 5-Ingredient Flourless Blueberry Chocolate Cake
This rich and creamy plant-based chocolate cake does not contain any flour – and requires only five ingredients.
While preheating the oven to 350F, stir together cacao powder, sugar, baking powder, then add blueberry purree and vanilla. Spread into a pan and bake for 25 minutes at 350F.
Let the cake cool for at least 20 minutes, and top the cake with coconut flakes. Voila!

Or you could try baking a fluffy vegan cake with a lemon-y twist, if sickly-sweet cakes are not your thing.
You would only need flour, sugar, baking powder, lemon zest and juice, vegetable oil, and water.
Mix together the flour, sugar, baking powder, and zest; then add the lemon juice, oil, and water and mix thoroughly.
Bake for 30 minutes and leave to cool for a further 10 minutes. While the cake is cooling down, sieve icing sugar into a bowl and mix in the lemon juice – and pour it over the loaf!
