Not that you needed a reason to bake a cake, but in case you want an excuse, October 2-8 is National Cake Week.

So go preheat that oven – because this week calls for celebration.

1. 5-Ingredient Flourless Blueberry Chocolate Cake

This rich and creamy plant-based chocolate cake does not contain any flour – and requires only five ingredients.

While preheating the oven to 350F, stir together cacao powder, sugar, baking powder, then add blueberry purree and vanilla. Spread into a pan and bake for 25 minutes at 350F.

Let the cake cool for at least 20 minutes, and top the cake with coconut flakes. Voila!

2. Basic White Cake

Every vegan should have an easy, basic vanilla cake recipe on hand, which you can get creative with, adding fruit or various icing on top.

You’ll need flour, baking powder and soda, salt, vegan margarine, sugar, vanilla, apple cider vinegar, and water.

Sift together the flour, baking powder, and baking soda. In a separate bowl, whisk the salt, margarine, sugar, water, vanilla, and vinegar until blended. Combine the two mixtures and pour the batter into a pan.

Bake for 30 to 40 minutes and let the cake cool for 10 minutes – and dig in!

For all of us lazy vegans, mug cakes are the perfect compromise.

All you need for this chocolate mug cake is 2 tbsp of flour, 1 tbsp sugar, 1 tbsp cocoa powder, 3 tbsp soy milk, 1/4 tbsp vegetable oil – toppings such as ice-cream and mini marshmallows are optional.

Mix dry ingredients together, then add the wet ones; mix until smooth, then microwave for one minute.

4. Lemon Cake

Or you could try baking a fluffy vegan cake with a lemon-y twist, if sickly-sweet cakes are not your thing.

You would only need flour, sugar, baking powder, lemon zest and juice, vegetable oil, and water.

Mix together the flour, sugar, baking powder, and zest; then add the lemon juice, oil, and water and mix thoroughly.

Bake for 30 minutes and leave to cool for a further 10 minutes. While the cake is cooling down, sieve icing sugar into a bowl and mix in the lemon juice – and pour it over the loaf!

5. Banana Bread

Have some overripe bananas in the kitchen? Use them for a delicious, easy-to-make banana bread.

This recipe requires only 4 overripe bananas, sugar, vanilla, flour, baking powder, salt, and water.

Mash the bananas with a fork in a large bowl, then add the sugar, vanilla, water and mix.

In another bowl, combine the flour, baking powder, and salt. Pour this mixture into the bananas and mix well – this is where you can get creative and add chocolate chips, walnuts, or whatever tickles your fancy.

Bake for 55-65 minutes and you’ve got yourself a mouth-watering banana bread!
