Premier League football club West Ham United has shared vegan recipes online for its fans amid the coronavirus (Covid-19) pandemic.

The team’s Head Chef Edd Nicell is posting the recipes for supporters who are, due to the lockdown, ‘spending more time at home and, as a result, preparing more home-cooked meals’.

Dishes including Butternut and Bean Quesadilla, Aubergine Lasagne, and a Mushroom and Spinach Risotto have been uploaded onto the club’s site.

‘Vegetarian and vegan meals’

“With the unfortunate change in weather, this week why not take this opportunity to spend a bit more time in the kitchen?” Nicell states.

“It’s great to see so many of my friends and family brushing up on their culinary skills and many are taking the time to look more carefully at their diets and what they’re putting into their bodies.

“Why not try and incorporate some vegetarian and vegan meals into your weekly menus. I personally try and have one day a week where I don’t eat any meat, but you can add meat into these recipes if you wish.”
