A huge plant-based Christmas banquet is rolling out in Manchester next month.

The Vegan Xmas Extravaganzo will be led by MasterChef semi-finalist Jackie Kearney, who will serve up the main dishes, and baker and pastry chef Charlotte O’Toole – who will be responsible for desserts.

Incubator project

Taking place on December 1, the event is part of the new RedbankCo Pop-up Incubator project in Manchester’s Green Quarter, devised in a bid to support up-and-coming food professionals wanting to showcase their food.

Pete Sheppard, owner of RedbankCo, told local outlet Manchester Evening News: “I wanted to create an environment that allows the operator to focus on the food and the customer experience, without needing to worry about the setup and operation of a running business.

“I believe that RedbankCo can be the destination for the pop-up restaurant scene in Manchester.”

Tickets cost £40.29, which includes an arrival drink and canapes, ahead of the 15-course banquet; you can purchase them here.
