Vegan Celebrity Chef To Open Plant Based Mexican Restaurant In New York

Plant-based celebrity chef Matthew Kenney will be opening a vegan Mexican eatery in New York’s East Village.

The eatery, which will be the third restaurant for Kenney, will make its debut later this fall.

Called ‘Bar Verde‘, the plant-based spot is inspired by the chef’s travels around Mexico, and will feature vegan versions of nachos, tamales, and tacos.

The classic Mexican dishes will be using butternut squash queso and cashew crema instead of the usual dairy.

Other treats on the menu include wild mushroom-stuffed tamales, tacos filled with farro chorizo, and avocado tempura.

Diners will be able to choose from a range of plant-based desserts, including churros and mango cheesecake.

The all-day restaurant also features agave spirits, as well as sustainable beer and wine.

Reservations are available October 16.
