An Austin-based vegan bakery has fought off fierce competition to clinch the top title at a prestigious annual food competition in Texas.

Skull & Cakebones won the grand prize of $25,000 at this year’s Quest for the Texas Best competition hosted by supermarket chain H-E-B Grocery Co, which has 380 outlets across Texas and Mexico.

Sascha Biesi and Yauss Berenji founded the bakery in Austin just four years ago, producing indulgent desserts, using locally-sourced ingredients.


The bakery – whose motto reads ‘everything we do is vegan because if you can make a tasty dish without using animal products why wouldn’t you?’ – won for its Mocha Marmalade Trifle.

This decadent chocolate cake combines layers of cocoa sponge sandwiched with coffee buttercream frosting. It is then slathered with a chocolate pudding topping.

When asked about the competition, Berenji said: “This means that we’re doing something right.” She added that they would use the cash prize to ‘pay off our freezer, take our staff out for a night of well deserved fun and save it for the next pitfall’.

Fierce competition

The tough contest saw 565 entrants from 200 Texas towns.

Judges marked the entrants’ speciality food items on taste, customer appeal, value, uniqueness, market potential, and differentiation from current products available at H-E-B retail outlets. 

Skull & Cakebones’ Mocha Marmalade Trifle will now be available from H-E-B’s supermarket locations.
