Portland Brand To Launch High-Protein Vegan Chickpea Ice Cream

Local food moguls Micah Camden and Matt Lynch are set to launch a fully vegan ice cream company in Oregon – offering high-protein frozen desserts made from chickpeas.

The Little Bean enterprise – which will officially launch this fall – will consist of a food cart, a truck, and a complete ice cream shop, all based in Portland.

The company will offer pastries and ice cream in a series of unique flavors – all made with chickpeas as a key ingredient.

Key ingredient

The use of legumes means Little Bean’s products will pack an extra protein-and-fibre punch.

It has also allowed Camden and Lynch to keep their products dairy-free, gluten-free, non-GMO, and organic.

Discussing Little Bean’s ingredient choices, Camden told Eater: “It’s for the allergens and it’s for the environment.

“Anything they can do with soy, I can do with chickpeas.”
