Plant-based food tech startup Impossible Foods has rolled out its first non-burger product in Chicago, dubbed the ‘Impossible Taco’.

The second generation of the vegan Impossible food items – the Southwest Impossible Taco – is part of a collaboration with restaurant Tallboy Taco.

The Silicon Valley startup is known for its Impossible Burger, a plant-based patty made from all-natural ingredients that resembles meat in all aspects – but uses 95 percent less land, 74 percent less water, and creates 87 percent less greenhouse gas emissions than meat.

The Impossible Taco comes served in a house-made hard shell and is topped with shredded lettuce, pico de gallo, and salsa arbol.

The innovative item, which is available for a limited time and costs $12 for a pair, is one of the first non-burger uses of the Impossible Meat product in Chicago.
