A vegan pop-up eatery and caterer will open a brick-and-mortar location in Milwaukee, Wisconsin this spring – featuring a plant-based ‘butchery’.
Beatrix Foods, with its tagline of ‘Rabbit food, reinvented’, will be launching the vegan restaurant – named Celesta – at 1978 N. Farwell Avenue in March or April.
The site will include a vegan ‘butchery’ selling house-made seitan by the pound.

Celesta, which will also have a full bar and a small takeout counter, will be open six days a week for breakfast, lunch, and dinner, as well as brunch on the weekends.
Chef-owner Melanie Manuel’s dishes are known to feature flavors from international cuisines.
“We also plan to have a robust happy hour with specialty cocktails and fun bar bites, as well as late-night drinks with a bar menu,” she told the Journal Sentinel.
The eatery will also include gluten-free menu items.
Valentine’s dinner
Diners can try Beatrix Foods’ dishes before the opening at the National, 839 W. National Avenue, where Manuel is holding a vegan Valentine’s dinner on February 12.
