A vegan restaurant is set to hit Merseyside in Autumn of this year.
The eatery – which will be called Pheonix – will be in St Helens, on Corporation Street. Founder Ann-Marie Owens, who also owns vintage boutique Phoenix Apparel, looked at a number of venues before settling on one opposite her shop.
According to the entrepreneur, there is a ‘massive appetite’ for vegan produce in St Helens – an opinion based on the success of vegan fairs she has held in the town in the past.
She said: “Our fairs have had an amazing response. I’m confident the restaurant will too. The vegan – or plant-based – movement is one of the fastest growing movements on the planet.
“If you look at the vegan fairs as research, this restaurant is much-needed. It is an option for everyone – not just vegans.”
The restaurant will have a unique style. Owens says: “It will all be done out in an upcycled vintage style and the menus will change and offer authentic recipes from different types of traditional and world cuisines. I’m already talking with a few chefs who are really excited about it.”
She added: “We’ve got a lot of work to do to redecorate it – there’s a few walls to knock down and a few to build, lots of plastering, but the raw materials are all here.
“It’s just the right size, and just across the road from the Phoenix collective and theatre.”
There are currently plans to open the restaurant – which should be up and running by October – every day. Customers will be able to choose from a range of meals, including afternoon teas, Sunday roasts and different cuisines including Italian and Thai.
Alcohol in the form of wines and bottled beers will also be available.
