A Chilean startup is using a machine-learning algorithm that cooks plant-based products, in a bid to disrupt the factory-farm food system.
The food tech brand, NotCompany, uses algorithms that make connections between complementary ingredients, and combines them into cutting-edge recipes that substitute animal-based foods.
The AI, called Giuseppe, identifies suitable alternatives by going through data sets of the chemical, molecular, and nutritional components of ingredients – as well as considering their environmental impact at the same time.
NotCo has already developed its first product: a ‘Not Mayo’ mayonnaise made with peas, basil, potatoes, and canola oil.
The startup’s co-founder, Matias Muchnick, has said he sees his company radically altering the food industry.
He believes science-focused food startups will disrupt the environmentally and morally taxing factory-farm industry by creating alternatives that taste as good as or better than meat and dairy options.
NotCo plans on bringing out plant-based milk, chocolate, Greek yogurt, and cream cheese to the market next.
“Our focus is to be the Nestlé of millennials,” he says.
“We really want to fill your fridge with NotCo products.”
