Foodie Acclaim After Specialty Vegan Chef Takes Up Residency In Kent Pub Kitchen

A vegan chef has launched a plant-based menu in a popular pub in Kent, as part of a residency at the venue.

New Zealander Stephanie Hinton started serving the menu at Fairmeadow in Maidstone two weeks ago – and has already won praise from vegans and meat-eaters alike.

The menu includes a number of hit dishes like dough balls and garlic mayonnaise, loaded nachos, raw Thai green curry salad, and chocolate hazelnut mousse tart with vanilla yogurt.

Speciality

The menu also includes Hinton’s speciality – artisan vegan cheese – as well as vegan versions of classic ‘meaty’ fare like sausages.

The chef told the Kent Messenger newspaper: “What I make here is ‘plant-based’ pub grub.

“My speciality is veganising things. I’m working on making vegan sausages and salami by Christmas. 

“I let the flavours do most of the work. It is about long, slow cooking.”

Demand

Hinton, who also runs artisan deli brand Ponga, says there is ‘definitely demand’ for vegan food in the area.

She said: “I think a lot of vegans had missed having options in town. I have been getting a lot of happy emails. There is definitely demand for it.

“I’m really happy about it. I was scared because I was worried I couldn’t keep it up, but I’ve been serving around 15 tables a day.”
