England’s Vegan Capital Brighton Now Home To Another Plant-Based Eatery

A Brighton resident has created a sustainable new vegan eatery – in the heart of the city’s train station.

Marc Brown is the Founder of CousCups, which sells healthy plant-based food. The menu includes a number of options, including vegan caviar and seitan, as well as quinoa and couscous pots – and leftovers are given to local rough sleepers.

The truck is actually made from a renovated horse box that Brown bought from eBay for £300. He did the work himself, learning how to weld and adding a copper sink and a small patch of artificial turf.

Learning curve

Founder Marc Brown said: “CousCups has been the focal point of my life for seven years now and has been a steep learning curve to get to this point, but it feels fantastic to finally be here. 

“My hope for CousCups is that it spreads positivity through a healthy diet without involving animals and provide an on-the- go option at the station for breakfast or lunch. Any unsold food each day will be donated to the homeless community and will also be looking to raise monetary donations for local homeless charities.

“Being a former meat-eater myself, I welcome non-vegans with open arms to come and try the menu. I believe that the best approach to veganism is to provide a tasty alternative to meat, so that’s what I hope to provide. Veganism has helped my mental and physical health a great deal and I would like to spread that positivity.”

Celebrity praise

Stand-up comedian Carl Donnelly said he is ‘super excited’ to visit CousCups next time he visits Brighton.

He added: “Brighton is one of the leading places in the country for veganism and as someone who spends a lot of time there, it’s always exciting to see what new vegan businesses are popping up. 

“One place that has been lacking in vegan options is the station so it’s great to see CousCups making their home there. The story behind the behind the business is amazing and it’s great to see it coming to fruition.”
