A college in Canada has opened a fully vegan eatery.

The Northern Alberta Institute of Technology (NAIT) is now serving students, staff, faculty and visitors an entirely plant-based menu out of Square Root, a restaurant situated in the school’s Bytes cafeteria.


The eatery prepares the fresh vegan dishes on a daily basis.

Offerings include curry, avocado toast, and mediterranean sweet potatoes with crispy chickpeas and fresh tomatoes.

NAIT Dietician Nick Creelman said: “More students are choosing plant-based food for health reasons, but also because they’re less expensive and more sustainable. I think we’ve done a great job on all of it – taste, look, appeal and price point.”


The school offers a number of vegan and meat-free options out of other eateries, which were apparently well received by attendees.

Creelman said: “We had this rising demand.

“We get lots of vegan and vegetarian requests on campus and it’s simply good to have a full spot the place you’ll be able to all the time go.”


Speaking with The Star, two students enjoying the restaurant’s food explained that, despite not being vegan themselves, they planned to come back for food they said was healthy and affordable.

An all-vegan eatery at the University of North Texas exhibits similar patterns.

Mean Greens Dining Hall estimates that up to 85 percent of its patrons are nonvegan.
